Pasta with yellow dates and pancetta

The recipe for pasta with yellow dates and bacon is a great lunch saver, but also a very tasty recipe to offer for dinner, for example, when time is short but you still want to offer your diners something really good.

If you want to make the recipe more creamy, when the cherry tomatoes are well wilted, puree them in a blender or masher, so that you get a homogeneous tomato puree, the pasta thus seasoned will be much creamier and maybe it will also please those who hate to find themselves in the dish the "skins" typical of fresh cherry tomatoes. If you don't find yourself with stracciatella, add some grated Parmesan cheese while whisking the pasta.

Ingredients of Pasta with yellow dates and pancetta

  • 200g short pasta (for example, our exquisite Paccheri) - servings for 2 people
  • 600g yellow dates
  • 150g of pancetta
  • 50g of stracciatella cheese
  • White onion to taste
  • Extra-virgin olive oil to taste
  • Basil to taste
  • Salt and pepper to taste

The recipe for Pasta with yellow dates and pancetta

After finely chopping the onion, let it brown in a drizzle of extra virgin olive oil, then slice the yellow dates in half and add them to the pan. We adjust the salt, season with a few fresh basil leaves and leave to cook with a lid on a moderate flame.

In a small frying pan, let us brown the bacon cut into chunks and brown it well without the addition of oil, the fat of the sausage will suffice. We will then use the crispy bacon to season the final dish.

Let's cook the pasta in plenty of salted water, drain it al dente and toss it together with the cherry tomatoes and a ladle of cooking water. We continue cooking until the water is completely absorbed.

We plate the pasta by placing the crispy pancetta on top, a few spoonfuls of stracciatella, half a leaf of fresh basil and, if desired, a little grated black pepper.
