How to prepare Calabrian meatloaf
The meatloaf is a classic main course that everyone really likes. Our version, in addition to minced meat, includes the use of spicy seasoned sausage to make the dish even more tasty.
- 600 g of minced veal meat
- 2 spicy seasoned sausages
- 5 eggs (1 for the dough and 4 for the filling)
- 70 g of grated pecorino cheese
- 200 g of bread white
- ½ cup of milk
- Black pepper
Soften the bread white with milk, then peel the sausages and crumble them in a bowl. Add the meat, the bread white (once soft squeeze it to remove excess milk), an egg, pecorino cheese, breadcrumbs, salt and pepper.
Mix the ingredients with your hands until you get a smooth dough. At this point prepare the boiled eggs, let them cool and shell them gently.
Place the meatloaf dough on a parchment paper creating a sort of rectangle. Put the boiled eggs in the middle and roll the dough with the help of the paper.
Put the meatloaf into a baking tray and bake it at 180° for about 30 minutes. After this time open the baking paper and continue to cook the meatloaf for another 15-20 minutes to form the crust.
Once ready and cooled remove the baking paper, slice and serve the meatloaf with potatoes, a salad or grilled vegetables. Enjoy your meal!
