Sweet Spianata Calabrese - Salumificio Fratelli Pulice
Salumificio Fratelli Pulice produces typical Calabrian salami and cured meats with skilful craftsmanship since four generations.
Spianata is a salami that stands out from other Calabrian cured meats for its size. The mixture of minced meat is cut from the ham and pork shoulder with the addition of lard removed from the top of the loin and flavored with ground chilli and grains of black pepper. The dough is stuffed into natural guts, drilled and in the case of the spianata inserted in special steel grids that give the crushed shape from which it derives its name. It finally undergoes a slow maturation that is about sixty days.
Gluten-free and without milk derivatives, the spianata comes in two variants: spicy and sweet.
