The Soppressata PDO, available in the white, sweet and spicy version, is the most prized Calabrian sausage because it is obtained from the processing of the leanest meat of the pig, the ham and the fillet, with the addition of the best lard from the front of the loin. The meat, minced at medium size and flavoured with black pepper or sweet or spicy chilli pepper from Calabria, is then stuffed into natural casings, pierced and tied by hand with natural string. Maturing time 50/60 days.
