The Soppressata di Calabria PDO, available in the white version, sweet and spicy, is one of the most precious Italian cured meat because it is obtained by processing the leanest pork meat, ham and fillet, with the addition of the best lard coming from the front of the loin. The meats, minced in medium cut and flavored with black pepper or sweet or spicy calabria chilli, are then stuffed into natural gut, pierced and tied by hand with natural twine. Maturing time 50/60 days.
