Spicy Calabrese Sausage Chain - Fratelli Pulice

Sausage is a salami that is very present in the Calabrian recipes, so much that it is still the most widely-used cured meat in the region. The dough is made from the meat of the shoulder and of the pork sub-soup with the addition of first-quality pancetta that gives it its softness. It is stuffed into natural casings, then pierced and then interwoven by hand if you want to give the characteristic chain shape or giving the cured meat a curved shape called curve or simply leaving it long. It finally undergoes a slow maturation that is about thirty days. The sausage is so ductile in culinary uses that it can be consumed, after careful cooking, even when it is fresh.
Gluten-free and without milk derivatives, the sausage is often flavored with Calabrian peperoncino, from which it takes its intense but, at the same time, delicate taste. It comes in three variations: spicy, sweet and white. Best cooked on the grill.
