The smoked provola of the Stirparo Dairy is one of the classic cheeses of Southern Italy. It is a product obtained from pasteurized cow's milk and unlike the fresh provola, it is smoked by the humid straw which gives it its yellowish color and a slightly more intense flavour compared to the classic provola.
