Salumificio Fratelli Pulice produces typical calabrese cured meats with skilful craftsmanship since four generations.
Pancetta is a type of Italian bacon and one of the most used cured meats in Calabrian cuisine. Obtained from the lower pig substove, it is presented in alternating layers of fat and thin. Gluten-free and without milk derivatives, pancetta is flavored with red pepper and may appear flat, cut with rind and cut into a rectangular shape, or rolled up, rinded and wrapped in gut. It finally undergoes a slow maturation that is about forty-five days.
