Guanciale is a sausage made from the cheek of the pig, a piece of meat composed of lean parts (the facial muscles) and a valuable fat component. It is salted and seasoned with black pepper grains. Hanging in controlled premises to promote better preservation of the organoleptic qualities, the cheek is matured for at least 60 days.
