Pancetta Tesa, with its classic rectangular shape, is obtained from the lower sub-cost of the pig. After salting, it is washed with water and wine vinegar. After the seasoning, which takes place in environments with humidity and controlled temperatures for at least 30/45 days, is covered with Calabrian chilli powder.
