Pecorino cheese with spicy chili pepper from the Stirparo Dairy is a very well known and consumed dairy product in Italy. It is a traditional cheese of the southern regions that comes from the processing of sheep's milk, as it happens with the classic pecorino cheese to which is added the Calabrian hot pepper. The spicy pecorino is left to age for a period of about 30 days.
From the studies carried out and from the consulted reading the average life of the product is 6 months at a temperature between 0/8 ° C, during this period the product maintains its organoleptic and microbiological characteristics stable, even if they are kept stable for a longer period, at least up to 8 months.
