Pecorino cheese with spicy chili pepper from the Stirparo Dairy is a very well known and consumed dairy product in Italy. It is a traditional cheese of the southern regions that comes from the processing of sheep's milk, as it happens with the classic pecorino cheese to which is added the Calabrian hot pepper. The spicy pecorino is left to age for a period of about 30 days.
