Pancetta of Calabria PDO - Salumificio Menotti
The Pancetta of Calabria PDO, with its classic rectangular shape, is obtained from the lower sub-cost of the pig. After salting, it is washed with wine vinegar. After the seasoning, which takes place in environments with humidity and controlled temperatures for at least 30 days, is covered with Calabrian chilli powder.
