Salumificio Fratelli Pulice produces typical Calabrian cured meats with skilful craftsmanship since four generations.
'Nduja is one of the Calabrian cured meats that is finding more evidence in the world. It is a spicy spreadble salami with a very strong aroma and a creamy consistency, used a lot in kitchen, in the first courses as well as in appetizers and bruschette.
Gluten-free and without milk derivatives, 'Nduja is derived from the careful selection of fat parts of pork, such as pancetta and guanciale, and flavored with Calabrian chilli peppers, from which derives its intense and decisive taste. It is stuffed into natural casings, drilled and then tied by hand with natural twine, finally subjecting it to a slow maturation that is about sixty days.
Ingredients: fat pork (40%), Calabrian chili pepper (30%), pork meat, salt.
