Pecorino "Primo Sale" is a fresh cheese obtained from Tuma, which is sprinkled with salt and then left to mature for about a month. This is the second degree of maturation of pecorino. It comes with a color that is closer to white than to yellow, this is due to the short period of aging to which it has been subjected.
