Calabrian Guanciale - Salumificio Menotti
Guanciale is a salami obtained from the cheek of the pig, a piece of meat composed of lean parts (the facial muscles) and a component of fine fat. It is salted and seasoned with black pepper grains and ground chilli pepper from Calabria. Hanging in climatically controlled rooms to promote better preservation of the organoleptic qualities, guanciale is left to mature for at least 60 days. Gluten-free and milk-derived-free.
