Calabrian Black Pork sausage is a typical Calabrian product known worldwide for its rich and aromatic flavor. The product is obtained by processing selected cuts of pork shoulder and rib, adopting artisanal techniques. The production process used allows the valuable organoleptic qualities of the meat to remain intact, which would otherwise be damaged by the increase in temperature due to industrial processing. For the production, a mixture of spices, flavorings and sweet chili pepper is used, which, combined with the pork, give the sausage a unique taste.
