Scoratelli rossanesi

Scoratelli are Calabrian sweets typical of Rossano, a town in the province of Cosenza. Generally prepared on the occasion of a happy event, they are made of fried dough and covered with sugar and cinnamon.

Ingredients

  • 500 g of water
  • 600 g of flour
  • 30 ml of olive oil
  • 3 bay leaves
  • Seeds oil
  • Sugar
  • Cinnamon powder

The recipe

To prepare the scoratelli rossanesi, put water, olive oil and bay leaves in a pot, then bring to the boil.

Then add the flour and stir quickly until the dough comes off the walls. Lay the dough on a pastry board, work it still warm and beat it to remove any lumps.

Cut the strings out of the dough giving them the typical bow shape, heat plenty of seed oil and fry them. Once ready pass them in the sugar with cinnamon and serve them still hot, accompanied by a sweet wine or an aromatic liqueur.
