Stuffed artichokes

Stuffed artichokes Calabrian style are a dish prepared without meat or eggs, in which the main protagonist is the seasoned pecorino cheese.

  • 6 artichokes
  • 200g of breadcrumbs
  • 60g of grated pecorino cheese
  • 1/2 glass of extra virgin olive oil
  • 2 sprigs of parsley
  • 2 cloves of garlic
  • Black pepper to taste
  • Salt to taste
  • The juice of one lemon

How to make stuffed artichokes Calabrian style

Bring the water to the boil. In the meantime, clean the artichokes by removing the stalks, the outer parts and the inner barb. Fill a bowl with water and lemon juice, then soak the artichokes in it.

When the water boils, pour in the artichokes, add salt and cook for about five minutes. Meanwhile, prepare the filling.

Put the breadcrumbs, pecorino cheese, a pinch of black pepper, chopped parsley and garlic, oil, salt to taste and mix in a bowl. Fill the artichokes with this mixture, starting from the centre and distribute it between the leaves.

Place the stuffed artichokes in a high-sided frying pan, pour in 1/2 cup of water and cook over a low/medium heat, adding more water if necessary. Once soft, the artichokes alla calabrese are ready. Enjoy your meal!
