Stewed salt cod with potatoes: the Calabrian recipe

Stewed cod with potatoes is an excellent fish dish, which actually becomes a main course thanks to the presence of carbohydrates in the potatoes. It is a very tasty dish with a rustic flavour. A dish that can be prepared in all seasons because it is good both hot and cold. In Italy there are many ways to enjoy cod, often each region has a different one.

Stewed salt cod with potatoes: ingredients for 4 people

  • 6 slices of salt cod
  • 3 potatoes
  • 10 cherry tomatoes
  • 16 green olives
  • 1 glass of white wine
  • 1 onion
  • 1 clove of garlic
  • 1 sprig of parsley
  • 1 sprig of rosemary
  • 4 spoons of EVO oil
  • 1 hot red chilli pepper
  • Salt

Stewed salt cod with potatoes: the recipes

To prepare the stewed cod with potatoes, chop the garlic, onion, parsley and rosemary needles. Heat a little extra-virgin olive oil in a saucepan and add the chopped herbs, then fry everything.

Dry the pieces of cod very well and add them to the saucepan, then add the white wine and continue cooking.

Add the halved cherry tomatoes and sliced olives and leave to gain flavour for 10 minutes. Peel the potatoes and cut them into chunks, then add them to the cod with the chilli pepper.

Add hot water to keep the preparation moist, adjust the salt and leave to cook with the lid on until the potatoes are cooked through. Serve the stewed cod with potatoes piping hot.
