The Shepherd's lamb is a typical dish of the Calabrian tradition. Clearly of peasant origin, this recipe aims to enhance lamb with ingredients of strong flavor such as onion, garlic and pecorino cheese.

How to make the Shepherd's lamb
Cut the meat into large pieces. Put them in a saucepan, add salt and pepper, scatter with the sliced garlic cloves, sprinkle with salt and freshly ground pepper, then drizzle everything with the olive oil and let flavor for a few hours.
In a pan, melt two tablespoons of fat to flavor the onions cut into thin slices, which will be removed from the heat once they become transparent. Then, brown the meat and cover it with the pecorino cut into thin slices, then sprinkle everything with the onions and cook for about an hour.
At this point, transfer the pan in the oven at 180 degrees and finish cooking for 5-10 minutes. It is recommended to eat the Shepherd's Lamb with a red wine with a dense tannic texture. Enjoy!
