Savory pie with potatoes and speck: ingredients for 4 people

  • 1 roll of puff pastry
  • 350g of potatoes
  • 120g of smoked mozzarella or provola cheese
  • 120g of speck
  • Grated Parmesan cheese
  • 1 yolk
  • Salt and black pepper

How to make Savory pie with potatoes and speck

Wash the potatoes (we obviously like to use Potatoes from Sila PGI), then place them in a pot, cover them with water and boil them for at least twenty minutes after the water has started to boil, then peel them and let them cool.

Prepare the speck by making small pieces, then cut the potatoes and mozzarella into pieces, lightly mashing them with the tines of a fork.

In a fairly large container, arrange all the ingredients sprinkling everything with a bite of grated Parmesan cheese. We arrange the salt and pepper, then mix carefully, so as to best mix all the ingredients.

Recover a round pan and cover it with parchment paper, then place the puff pastry roll inside it, handle it so as to best cover the surface of the pan. Fold the edge of the puff pastry and brush the edges with the yolk of an egg.

We bake our delicious speck and potato quiche in a static oven preheated to 180°, then cook for about half an hour.

When cooked, we can bring our savory pie to the table and slice it, consuming it still hot.
