Gluten free recipe: pasta with porcini mushrooms

Penne pasta with porcini mushrooms are a seasonal first course, easy to make and perfect for those who are intolerant to gluten. This version has an even stronger flavor thanks to the chestnut flour from which the pasta is made. The sauce is made with porcini mushrooms and cream, perfect ingredients to obtain a tasty cream.

Pasta with porcini mushrooms: the ingredients

  • 320 g of chestnut penne pasta
  • 400 g of porcini mushrooms
  • 250 ml of cooking cream
  • Parsley
  • EVO oil
  • Salt
  • Black pepper

  1. Clean the mushrooms carefully and cut them into chunks.
  2. Pour a drizzle of oil on the bottom of a large non-stick pan, add the garlic and put on the heat. Leave the whole garlic to brown, then add the mushrooms. Season with salt and pepper and continue cooking until the mushrooms are cooked.
  3. Remove the garlic, take half of the cooked mushrooms, transfer them in the mixer and add the cooking cream. Blend until you get a homogeneous cream, in the meantime also cook the gluten-free pasta in a pot of boiling salted water.
  4. Add the cream to the rest of the mushrooms and leave to cook for a while. Once the pasta is cooked, drain it, put it in the pan with the mushrooms for a few moments, sprinkle with the chopped parsley and serve hot. Enjoy your meal!
