Calabrian recipes: pasta with dried tomatoes and cauliflower

Pasta with dried tomatoes and cauliflower is a first-course in winter and has an intense flavor. It's super easy and quick to prepare this amazing dish! The combination of dried tomatoes and cauliflower gives a strong and tasty taste with an overwhelming scent.

Ingredients for 4 people

  • 400 g of rigatoni pasta
  • 70 g of dried tomatoes
  • 1 white cauliflower
  • 1 clove of garlic
  • Pine nuts
  • Crushed chili
  • Salt
  • Black pepper
  • EVO oil

Preparation

Brown the garlic and the crushed chili in a large pan. Add dried tomatoes and cook for a few minutes in low heat. Add salt, and black pepper.

 

Meanwhile, boil the top of cauliflower in plenty of salted water, and once it's cooked, put it into the dried tomatoes sauce.

Cook the pasta in boiled water from the cauliflower until "al dente" (cooked so as to be still firm when bitten). Then, drain the water away and stir in the prepared sauce.

At this point, after adding a few toasted pine nuts, the pasta is ready to be served!
