How to make the Calabrian pasta and broad beans

Pasta and broad beans is a classic of the culinary culture of southern Italy. The typical recipe is the one that comes from the combination of broad beans and pecorino cheese, native of Roman cuisine. However, this dish also exists in another tasty variant, the Calabrian pasta and broad beans: a homemade dish prepared with fresh broad beans and bacon.

How to make the Calabrian pasta and broad beans

Clean the broad beans by removing the pod and skin, chop the onion and fry it in a pan with some olive oil, then cut the bacon into cubes and add it into the pan. Once browned, add the broad beans, salt and pepper and cook for five minutes.

Meanwhile cook the pasta in abundant salted water, drain it and pour it into the pan with the beans.

Add the pecorino cheese and sauté the pasta away from the heat. Serve hot and enjoy with a glass of good red wine.
