How to make "Carnival Omelette"

The carnival omelette is typical of Calabria, born in the period in which the small towns used to make masks. The residents used to go around the squares, dancing and having fun, reciting pantomimes. It was customary to give salami, eggs, cheese, wine, all things that were easily found in all the houses.

At the end of the day, the masked figures gathered to prepare large omelettes they consumed accompanied by full-bodied glasses of wine. And so was born the succulent carnival omelette.

Ingredients for 4/6 people

• 350 gr of spaghetti or spaghettini, someone also uses the vermicelli

7 eggs

• 250 gr Calabrian sausage or brawn

• 250 gr tuma

• 150gr silan cheese

• 150 gr of cooked ham

• 2 hard boiled eggs

• 50 gr Parmesan cheese

• black pepper q.b.

• Extra virgin olive oil. q.s.

How to make "Carnival Omelette"

Cook the noodles in salted water, leaving them al dente, drain and let them cool.

Prepare two hard-boiled eggs.

Meanwhile, in a large bowl, beat 7 eggs with the Parmesan cheese, the black pepper salt q .s. being careful not to overdo it because there is already salami's pepper and then, mix the spaghetti in it.

Put in a pan a drizzle oil e.v.o. and place half of spaghettini inside.

Then lay the salami in it, the sliced hard-boiled eggs, the cheese, the cooked ham, cover with the other half of pasta.

At the beginning, cook on high heat to make color, turn with a plate, continue cooking over low heat. It must cook well inside to not have the unwelcome surprise to find the raw egg (it takes at least 30/35 minutes.)
