Sauteed artichokes: the Calabrian recipe

Sauteed artichokes are a Calabrian recipe which combines the artichoke sweetness with the marjoram and white wine aromas. This tasty and hearty side dish is accompanied by slices of bread fried in lard.

Ingredients for 4 people

  • 8 artichokes
  • Half lemon
  • Half glass of white wine
  • EVO oil
  • Garlic
  • Marjoram
  • Chili powder
  • Salt
  • 4 bread slices
  • 20 g of lard

How to make the sauteed artichokes

Clean the artichokes removing the outer leaves, tips, stems and, with the tip of a knife, the beard. Cut them in half and pass them in cold water and lemon juice.

Heat the oil in a pan, add the garlic and the artichokes, then season with salt, chili powder and marjoram. During cooking, add a few tablespoons of hot water mixed with the wine once in a while.

Meanwhile, fry the bread slices in the lard and cut them into two parts. When cooked, pour the artichokes into a slightly concave serving dish and surround with the fried bread slices.
