Pork ribs in red wine

Pork ribs in red wine are a delicious, rustic and tasty second course that will win over even the most demanding palates.

A very simple recipe, suitable even for those who are not exactly an ace in the kitchen but would like to try their hand at something tasty.

Pork ribs in red wine, ingredients

  • 1kg of pork ribs
  • 750ml of red wine
  • 30g of tomato paste
  • 2 garlic cloves
  • 1 sprig of rosemary
  • 2 sprigs of sage
  • 1 teaspoon of pepper corns
  • Salt to taste
  • 4 tablespoon of extra virgin olive oil

How to prepare pork chops in red wine

To make pork chops cooked in red wine, first take the poached garlic cloves and fry them in a saucepan suitable for long cooking with a little oil. After a few minutes, add the pork chops and brown them on all sides very slowly.

When the ribs are nicely browned, add the red wine, rosemary, sage, black pepper berries and tomato paste, mix well and cook over low heat for at least an hour with the lid on, or until the meat is very tender.

After this time, uncover and check that the sauce has reduced. If it hasn't, increase the heat and wait for it to dry out a little more, then adjust the salt.

At this point serve the ribs, accompanying them if you wish with potatoes or simply boiled beans. Enjoy your meal!
