Pasta with pumpkin and nduja

Today we offer you a simple and quick first course to prepare, excellent for those who love strong and spicy flavours such as Calabrian nduja.

Pasta with pumpkin and nduja, ingredients for 4 people

  • 500g of pumpkin
  • 400g of spaghetti
  • 1 garlic clove
  • 1 tablespoon of nduja di Spilinga
  • 1 tablespoon of extra virgin olive oil

How to make pasta with pumpkin and nduja

First clean the pumpkin by removing seeds, filaments and peel. Cut the pumpkin into regular cubes, so that it cooks evenly and quickly.

Pour a little oil and the garlic clove into a pan. When the oil is hot, add the pumpkin, a pinch of salt and cover with a lid (it should not be necessary to add water as the pumpkin releases its water when cooking). Cook the pumpkin for about 15 minutes on a medium heat.

When the pumpkin is almost cooked, remove the garlic and add the nduja. Stir with a wooden spoon and let it melt and mix with the pumpkin.

Drain the pasta al dente and pour it into the pan with the pumpkin. Let the flavours mix well adding, if necessary, a little cooking water of the pasta. Serve hot and enjoy!
