Pasta salad with tuna and courgettes

In summer we are constantly looking for quick, fresh and light dishes without sacrificing taste. Seasonal vegetables often come to our rescue, including courgettes, which lend themselves to a thousand culinary uses, from first courses to side dishes or even raw, julienned and marinated for use in certain types of salad.

If you just can't give up pasta, then a pasta salad dish with courgettes may be the right solution for lunch or dinner on hot summer days; in this case we propose a tasty pasta salad with tuna and courgettes, to prepare and store in the fridge for a few days. As a pasta format, we recommend farfalle or our trofie, home-made pasta with an unmistakable flavour.

Ingredients for preparing pasta salad with tuna and courgettes

  • 350g of short pasta (for 4 people)
  • 250g of courgettes
  • 160g of tuna in oil (2 tins)
  • 1 lemon
  • Extra virgin olive oil to taste
  • Parsley to taste
  • Salt to taste

The recipe explained step by step

Bring the salted water for cooking the pasta to the boil. Clean and wash the courgettes carefully, then cut them first into four parts for the long side of the vegetable, then reduce each part into cubes.

Halfway through cooking the pasta, add the courgette cubes to the pan and finish cooking. Drain the pasta with courgettes al dente and stop the cooking process by running cold running water through the colander.

Place the pasta with courgettes in a bowl together with the drained tuna, 2-3 tablespoons of extra virgin olive oil and the juice of a lemon. Mix everything together well, then wait a quarter of an hour before serving.
