  • 320g of short pasta
  • 750g of Sila potatoes from PGI
  • 150g of celery
  • 150g of carrots
  • 1 Tropea red onion PGI
  • 130g of lard
  • 20g of tomato paste
  • Fresh provola cheese to taste
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste

How to make pasta and potatoes with provola cheese

To prepare the pasta and potatoes with provola cheese, start by cleaning the celery, carrot and onion and then chop them finely. Also clean the potatoes and cut them into irregular pieces of about 2cm. Finally, slice and chop the bacon.

Put a saucepan with a little oil on the fire, add the lard and let it warm up gently. Then add the chopped onion, carrots and celery. After a few minutes, add the potatoes and allow them to take on flavour, stirring from time to time. Finally add the tomato paste and stir. Pour in 600g of hot water, add pepper and salt to taste. Finally, cover with a lid and cook for 30 minutes.

Now pour in the pasta, immediately add another 250g of hot water and bring to the boil. Let the pasta cook, stirring occasionally, and just before serving add the diced provola. Stir until the mixture is creamy and almost dry. Enjoy your meal!
