Creamy and rich in flavour, risotto with honey and sage is a tasty first course, perfect for big occasions.
To prepare the risotto with honey and sage, finely chop the onion and brown it in a pan with oil and butter.
Add the rice and after toasting it for a few minutes, stirring occasionally, blend with the white wine while keeping the heat high.
When the alcohol has evaporated, add the boiling broth, one ladle at a time until the rice is flush covered. Bring it to cooking always adding liquid a little at a time. Five minutes before the end, finely chop the sage with a knife and add it to the rice.
Out of the fire, mix with goat cheese, honey, Parmesan cheese and the pepper. Serve the risotto immediately and enjoy with a structured, full-bodied red wine.
