How to make pasta with nduja sauce

Fileja with nduja: a combination of excellent local products. Fileja is a type of typical Calabrian pasta also known as "maccheroni al ferretto", the dough is made simply with soft wheat flour, durum wheat semolina, salt and water.

Nduja, instead, is originally from Spilinga. It is a soft cold cut with a spicy and smoked flavour that is well suited for flavouring sauces, but it is also delicious spread on a slice of bread.

Pasta with nduja sauce: ingredients for 4 people

  • 400 g of fileja pasta
  • 100 g of nduja
  • 500 g of tomato sauce
  • 4 tablespoons of EVO oil
  • Salt

Pasta with nduja sauce: the recipe

Add the EVO oil in a pan together with the nduja, light the fire and let melt the salami.

When the nduja is well melted add the tomato sauce, lower the heat to minimum and let the sauce cook.

Put a pot full of water on the heat, bring to the boil, season with salt and cook the pasta al dente.

Drain the pasta and stir it with the sauce, the fileja with nduja sauce are ready. If desired, enrich the dish with a sprinkling of seasoned pecorino cheese.
