Gnocchi with mushrooms and sausage: the Calabrian recipe

Gnocchi with mushrooms and sausage are a tasty and easy to prepare first course, ideal for those who love the flavors of the earth, especially when accompanied by a good glass of red wine.

This recipe includes potato gnocchi but you can replace them with the pasta you prefer, as the sauce with porcini mushrooms and sausage goes well with many other shapes.

Gnocchi Mushrooms and Sausage: ingredients for 4 people

  • 500gr of Potato Gnocchi
  • 2 fresh sausages
  • 300gr of Porcini Mushrooms
  • 1 Clove of Garlic
  • 1 Red Onion of Tropea
  • 4 tablespoons of Extra Virgin Olive Oil
  • Smoked ricotta for grating
  • Half a glass of white wine
  • Salt and pepper

Preparation

Rinse the porcini mushrooms in cold water to remove the earth residues, then cut them into slices and let them cook in a lightly fried garlic and onion, adding salt and pepper.

Meanwhile, clean the sausages from their casings and add them to the mushrooms after shelling them. Cook for about ten minutes over medium heat, stirring from time to time, and then blend with the white wine.

Boil the gnocchi in abundant salted water and drain them as soon as they rise to the surface. Stir the gnocchi in a pan with the mushroom and sausage sauce and, if necessary, add two or three tablespoons of cooking water. Serve hot and with a sprinkling of smoked ricotta. Enjoy your meal!
