Gnocchi with gorgonzola and nduja
Gnocchi with nduja and gorgonzola are a creamy and very tasty first course. A quick and easy recipe based on a few ingredients.
Gnocchi with gorgonzola and nduja: ingredients for 4 people
- 1 kg of potato gnocchi
- 200 g of gorgonzola cheese
- 100 g of Calabrian nduja
- 150 ml of milk
Gnocchi with gorgonzola and nduja: the recipe
First of all put a pot on the fire with plenty of water for cooking the gnocchi and bring to the boil. Remove the nduja from the gut and cut it into pieces. Remove the rind from the gorgonzola, put it in a non-stick pan with the addition of a little milk (about 100 ml) and melt it over low heat, stirring with a wooden spoon, until it forms a thick cream.
Then add the nduja and continue mixing until completely melted. As soon as the water boils, salt it with coarse salt and cook the dumplings for about a couple of minutes, then drain them keeping some cooking water aside and pour them into the pan with the nduja and gorgonzola.
Pour a little of the cooking water and, over high heat, sauté or stir with a wooden spoon to mix all the ingredients well. In case you want to soften the spiciness of the nduja, add milk instead of the cooking water of the pasta, then sauté and finish the preparation. At this point all you have to do is serve.
