How to make Arancini filled with ‘Nduja

Arancini filled with 'Nduja are an all-Calabrian revisiting of the typical Sicilian street food. Spiciness is what characterizes much of the cuisine in Calabria and it is the ingredient that make them so special and unique. Let's find out how to make them with this easy recipe.

Ingredients for 4 people

- 250 gr. of rice

- 3 eggs

- 1 pinch of saffron

- 150 gr. of 'Nduja of Spilinga

- 100 gr. of Caciocavallo Silano cheese in cubes

- 50 gr. of grated pecorino cheese

- flour, breadcrumbs, salt, black pepper, olive oil for frying

Preparation

Cook the rice in slightly salted boiling water, once cooked, drain it and let it cool in a bowl. When the rice is quite cold, add a pinch of saffron, two beaten eggs, grated pecorino cheese, a pinch of salt and black pepper. Mix everything.

In the meantime, cut the 'Nduja into small pieces and the Caciocavallo Silano into cubes. Form the rice balls with your hands and start to fill them with the 'nduja and caciocavallo cheese. Prepare a batter with flour, water, an egg and a pinch of salt. Pass the arancini in the batter and then in the breadcrumbs.

Fry the arancini filled with ‘nduja in a non-stick pan full of boiling olive oil until they are golden and crispy breaded. Before serving them on the table, we recommend drying excess oil with absorbent paper. Your arancini filled with ‘nduja are finally ready, enjoy your meal!
